Mediterranean Goddess Dressing

This dressing is delicious and chock full of ingredients that make you feel like a deity!! I like to pour it over a bowl of lentils, quinoa, roasted veggies, and greens. Feel free to get creative with it and add some hot sauce or extra spices to the mix.

Ingredients:

1. Extra virgin olive oil (1/2 cup)

2. Apple cider vinegar (2-3 tablespoons)

3. Sun dried tomatoes (5-6)

4. Garlic (2 cloves)

5. Scallions (green onions)—2

6. Smoked paprika (1 tsp)

7. Cumin (1 tsp)

8. Salt and pepper to taste

9. Tahini 1/3 cup

10. Water (1/2 cup)

11. Parsley (1/3 cup)

12. A bit of honey, maple syrup or stevia to taste


Steps:

Put the sundried tomatoes in your blender  and pour the water over. Let them soften for 10-20 min. Then add the rest of the ingredients  (except for the parsley)and blend away. If it’s too thick, add some more water. If it’s too watery, add some more tahini! Once it’s at its perfect consistency, add the parsley and pulse a couple of times until the parsley is coarsely chopped).



Serve over a delicious bowl of green, grains and veggies. Before you enjoy your creation, take 3 deep breaths of gratitude for the farmers that grew the ingredients, and yourself for investing in your nourishment and self care! 💜
